In partnership with Bord Bia (The Irish Food Board), Morsels Singapore at Dempsey Hill proudly presents Of Hearth and Harvest – a limited-edition menu that celebrates the harmony between Irish ingredients and Asian culinary techniques.

Created as a tribute to the Samhain Edition, a month-long celebration honouring Ireland’s world-class produce and the ancient festival of Samhain, this exclusive four-course experience at Morsels Singapore is available until 21 November 2025.

Savour the briny elegance of premium Irish oysters, relish the succulence of the world-famous Silverhill Duck—hailed as the finest duck on earth—and round off your meal with Irish whiskeys and liqueurs woven skilfully into cocktails and desserts.

The Busker Triple Cask Triple Smooth forms the base of this Irish Whiskey Highball, where notes of tropical fruit and vanilla from the single grain whiskey meld beautifully with neri ume (a Japanese paste made from salted and pickled plums) and calamansi. A refreshing tipple to kickstart the evening.

Grown in hanging baskets in Bannow Bay, Ireland, these Ostra Regal Irish oysters are prized for their plump texture and delicate, smoky flavour. Served in a set of three, each oyster is paired with inventive condiments – from burnt kombu oil, burnt banana leaf oil to a surprising blend of Guinness tausi (fermented black soybean) vinaigrette and sake kasu.

Silverhill Duck, celebrated as the world’s finest for its tenderness and consistency, takes centre stage in this dish. Slices of the premium poultry are glazed with Fercullen whisky and served alongside Upgrain®’s low-carb mazemen. Toss the noodles and enjoy them dry, then finish it with a Guinness dashi broth, served ochazuke-style for a comforting finish.

John Stone, Ireland’s renowned grass-fed beef, is produced with care under Origin Green – the world’s first national food sustainability programme. Hammer shin beef is sautéed with Fercullen Whiskey and sake kasu, then served with long, ribbon-shaped malfadine cooked al dente. Hearty and memorable, we love its bold collision of flavours and textures. 


Five Farms Irish Cream Horlicks Tiramisu (SGD 18)

Five Farms, the world’s first farm-to-table Irish cream liqueur, is crafted with the richest dairy cream and contains ten times the amount of Irish whiskey compared to typical Irish creams. When incorporated into a tiramisu with espresso, shiro miso, and Horlicks, it transforms into a well-balanced treat  – the perfect finale to dinner.
