Head Bartender Sophia Kang and Beverage Manager Gabriel Carlos have unveiled a mesmerising new menu, ‘Secret Garden’, that transports imbibers to the enchanting botanic gardens of the cocktail capitals of the world – Singapore, London and New York.
Drawing inspiration from the dazzling cocktail scenes of the three capitals, Sophia and Gabriel have concocted 12 extraordinary concoctions that weave together stories, cultures, botanical wonders, famous landmarks, and the unique vibes of the bar scenes.
Singapore Botanic
Immerse yourself in the first chapter of Secret Garden: Singapore Botanic, inspired by flowers, landmarks and more in our Botanical Gardens.
Rose of Sharon
Our pick out of the four tipples was the Rose of Sharon ($29), Sophia’s spin on the classic Singapore Sling with a Korean touch – a homage to where she was born. This cocktail was also inspired by the engravings of South Korea and Singapore’s national flowers -Rose of Sharon and Vanda Miss Joaquim- on the “Conversation” plaque in the Singapore Botanic Gardens.
Made with Brass Lion Dry Gin, Muyu Vetiver Gris, Cointreau, hibiscus, pineapple, yuzu and grenadine, you get a hint of flavours from both cultures in this refreshing, botanical and tropical tipple.
Kampung Kueh
Honourable mention goes to Kampung Kueh ($26), a toast to the kampung spirit, food and culture in Singapore. This aromatic, almost dessert-like cocktail is a unique one to try that tastes just like a kueh. Made with El Dorado 12 Years, Bitter Truth Golden Falernum, coconut, pandan, jackfruit, cream and egg white.

Continue your expedition to the Kew Royal Botanic Gardens in London.
Arethusa
Inspired by the classic Martini, that’s a staple in the UK cocktail scene, Arethusa ($31) was everything we loved in a cocktail – clean, smooth, spirit-forward, and we loved how it was paired with a side of Japanese Ume plums and pickles.
Shaken, not stirred, with London No. 3 Dry Gin, Haku Vodka, Mancino Secco Vermouth, Empirical The Plum, and Japanese Shiso Bitters.
Kitchen Garden
Kitchen Garden ($26) is precisely what we’d recommend to adventurous imbibers or those who fancy a savoury tipple. Made with Nuet Dry Aquavit, tomatoes, mushrooms, celery, and citrus, the glass is also coated with a house-made tomato powder. Earthy, vegetal-heavy and combining flavours worked well for this concoction.
Brooklyn Botanic
The journey ends with Brooklyn Botanic, inspired by cobblestone streets, warehouse buildings, the mesmerising luminary garden that the Brooklyn Botanic Gardens transforms into in winter, and more.
Dumbo
If you love a classic Old Fashioned, this will be your go-to cocktail at One Ninety Bar. Dumbo ($27) is made with Monkey Shoulder Triple Malt, House-made Peated Port Syrup, Scrappy’s Chocolate Bitters, Regan’s Orange Bitters, then smoked before serving.
Beautifully made and smoking it was a clever touch that added robustness to the aromas and flavour of the cocktail as a whole.
Bloom
Bloom ($28), a tipple inspired by a Milk Punch, was also pretty high up on our list. Made with Jura 12 Years, Cherry, Hojicha, spices, Thai Basil and Whey, this light and refreshing cocktail also had lovely aromas of basil and star anise.
