Seng Huat Coffee House (North Bridge): 24-hour Bak Chor Mee in Bugis

After a night out boozing, there’s just something so strangely gratifying about ending it with a fresh, piping-hot bowl of noodles—more specifically, bak chor mee or fishball noodles. It hits the spot, it quietens the growling belly and the extra bulk does well to cushion the effects of the following day’s hangover.

Being Singaporean, bak chor mee is something that all of us have an affinity for and it’s something that can be eaten at any time of the day. Located along North Bridge Road, Seng Huat Coffee House is a 24-hour supper haven that sells a variety of noodle options.

Impressive from pick-up to palate, the humble Bak Chor Mee (S$4) sports a crown of fried anchovies, diced scallions and a heaping mound of minced pork, lean pork, braised shiitakes and chilli and vinegar-soaked egg noodles—of which came in a monstrous portion.

What we loved about it and found particularly unique was that the mushroom sauce was delightfully fragrant with a deep umami flavour. Coupled with a good splash of quality black vinegar, the dish sang of a complex yet sensible marriage of tastes. Sour, spicy, savoury, meaty, sweet—it was a symphony on the tongue.

The meaty elements were spot on. The mince was nicely seasoned and the lean pork was firm, robust yet tender. If anything, our only main gripe was the slivers of pork liver which were overcooked, powdery and had a strong mineral flavour.

Their fishballs, which are all made by hand even until now, boast a smooth texture and a nice bounciness to it.

The fishballs tasted fresh and had a nice salty savouriness quality to it that complemented the springy egg noodles. A standard S$4 bowl comes with three larger-than-usual fish balls and slivers of thinly sliced fish cake.

There isn’t much that differs between the two noodle types apart from the ingredients present so it really just depends on what you’re craving.

Were the noodles here life-changing? Probably not but it hits the spot nonetheless with nearly every component of each dish hitting its mark. Definitely an option we’ll consider again if we’re ever in that part of town during the wee hours of the morning.
