FOC’s Bold Barcelona Flavours at Signature Reserve till October 25
Inspired by the vibrant flavours of Barcelona, the Signature Reserve x FOC menu transforms classic Catalan fare into refined bites designed to pair beautifully with selected whiskies and tipples.
We began our evening with the Foie Gras Mousse ($28++), elegantly topped with Vermouth Rosso Jelly and crisp crackers. The silky, luxurious mousse spread effortlessly over the cracker, delivering a burst of flavours with each bite. Rich, balanced, and irresistibly moreish, we found ourselves reaching for seconds and thirds.
Other highlights include Crispy Crab Croquetas ($16++) with Siracha Mayo, Roasted Atlantic Octopus & Pork Jowl ($34++) with Creamy Potato & Spicy ‘Ajada’. Each dish is a testament to the creativity of Chef Juanjo Carrillo, a Barcelona native with over 25 years of culinary mastery.
End your meal on a high note with the Mango Burnt Basque Cheesecake and Mousse ($14++) – a tropical twist on the beloved Spanish classic. The airy, vibrant mango mousse adds a refreshing contrast to the rich, creamy cheesecake base, creating a delightful balance of flavours and textures. Each bite is fruity, fresh, and satisfying – a sweet finale that lingers long after the last spoonful.

To complement this limited edition Spanish menu, Signature Reserve has launched six new cocktail creations, each crafted to elevate the dining experience. This innovative lineup adds a contemporary twist to the whisky bar’s drink offerings.
Discover the smoky allure of the Golden Ember ($28++), a bold cocktail crafted with Tomintoul Seiridh whisky, honey cinnamon, and lemon juice, finished with a mist of Old Ballantruan. It’s perfect for fans of peated whiskies – layered, aromatic, and unmistakably smoky.
Sip on the Tiki Illusions ($28++) for a tropical escape – a vibrant mix of Havana Club 30YO Rum, hibiscus tea, gula melaka, passionfruit, and lime juice. Rich, fruity, and served with two gummy bears, it’s a playful nod to island indulgence with a refined twist.
The Bitter Bloom ($29++) is an aromatic and complex cocktail built on the rich depth of Cadenhead’s Classic Dark Rum, infused with English Breakfast tea, Grand Marnier, and a dash of bitters. Each sip reveals layered notes of citrus, warming spice, and a subtle tannic finish, making it a sophisticated choice for those who appreciate bold, balanced flavours.
For something decadent, try the clarified Chocolate Martini ($29++) – a refined twist on the classic, crafted with vodka and Cacao White Liqueur. Smooth and crystal clear, it delivers the indulgence of chocolate in an unexpectedly elegant form.
Over 1,000 Different Whiskies Available at Signature Reserve
Signature Reserve’s whisky specialists are on hand to guide guests through an expertly curated library of rare and exclusive whiskies, including remarkable bottlings developed in collaboration with industry icon Frank McHardy. Enthusiasts can enjoy these distinguished drams by the glass, with the Frank McHardy Signature Series and Frank McHardy Grain Series available from $58 per pour.
Good news for collectors! Despite their rarity, select full bottles are available for purchase. A standout among them is the Frank McHardy Collection Grain Series 1993 North British, an exceptionally limited release with just 186 bottles ever produced.
Bottled at a robust cask strength of 51.5% ABV, this expression is full-bodied and richly layered, offering distinct notes of vanilla and toffee, beautifully balanced by a medley of sweet and spicy undertones. A true collector’s gem that delivers both complexity and character in every sip.
