There are plenty of stalls that sell it here in Singapore—even food courts sell it nowadays. But where do you go if you really want the best? This Michelin-approved oyster omelette stall may reside in one of Bedok’s most iconic hawker centre, 85 Fengshan Market. But contrary to it sharing the massive space with several other hawker heavyweights, they hold their own really well. Their claim to fame is simple: good quality oysters and incredibly fresh oysters and generous amounts of egg. Then there’s the added bonus of having a house-made chilli dip that’s totally out of bounds.

Ang Sa Lee Oyster Omelette has long been a staple amidst the competitive row of stalls in Chomp Chomp Food Centre. Ang Sa Lee cooks it the old-fashioned way with equal parts starch and egg along with a sizeable handful of plump, fresh oysters.

There are many folks who swear by their oyster omelette, but we personally feel that it’s nothing much to shout about. Decent and fresh as it is, its flavour isn’t as prominent so you’d have to rely pretty heavily on their spicy vinegary chilli sauce for additional oomph.

3. Huat Heng Fried Oyster – Featured in Michelin Guide

Featured in Michelin Singapore, Huat Heng Fried Oyster has made a name for itself with its traditional oyster omelette. Situated in Whampoa Drive Hawker Centre that is well known for good food, this place certainly lives up to the standards–worthy of being mentioned in the Michelin Guide.

Starch is mixed into the egg batter while whipping up the omelette, which gives it a thick consistency. Each bite was brimming with wokhei and the fat, juicy oysters they use makes every bite an absolute joy. Shout out to the chilli that is sour enough to cut through the grease without being harsh on the palate.

Many locals regard Newton Food Centre to be a tourist trap—and you’d be wise to trust them on this—but if there was one stall that we’d risk getting shortchanged for, it’s this one selling fried oyster omelette. Much eggier and crispier in comparison to conventional varieties without being heavy-handed on the starch, it’s unsurprising why people would claim this stall as legendary.

5. Lim’s Fried Oyster – Opens till Midnight Daily

If you happen to be around the Jalan Besar precinct, it probably wouldn’t hurt to make a beeline to Berseh Food Centre for Lim’s terrifically-prepared oyster omelette. Everything is made in-house and what makes them unique is the fact that they use two different chilli sauces—one that’s added during cooking, and another tangier one that’s served as a dip. As with any gold standard orh luak, the owner is generous with his egg and only uses fresh, plump oysters.
