Michelin Bib Gourmand Stall Fresh Taste Big Prawn Noodle Opens till 1am

A typical prawn noodle dish comprises fresh prawns, noodles and soup, and sometimes comes with pork ribs. Known as ‘Hae Mee’ in Hokkien, it might seem easy to whip up, but its perfecting the broth that’s the challenge.

An indisputable fact, the key to a delicious bowl of prawn noodles is its broth. A heady concoction that’s full-bodied, rich and porky, providing a savoury quality to complement the umami-dense prawn flavour. Many places do it decently but most fail to hit its mark, resulting in a dish that’s tasty through and through but somehow lacks that ‘x factor’.

Recently awarded the Michelin Bib Gourmand, Fresh Taste Big Prawn Noodle in Zion Riverside Food Centre is loved by many. P.s. It was previously called ‘Noo Cheng Adam Road Big Prawn Mee’.

We paid a visit and here’s what we thought.

Observing the cooks at work from the front, what we noticed about the items on display which was inherently different from other stalls was their choice of prawns.

Instead of the common farmed variety, Fresh Taste Big Prawn Noodle uses wild sea prawns which is plump, robust and much sweeter in comparison—or at least that’s the assumption.


Dry Prawn Noodles


We ordered a bowl of Dry Prawn Noodles (S$6) which includes a bowl of yellow noodles tossed in a saucy chilli-lardy mixture along and topped crispy fried shallots. It also came with a bowl of soup with three decently-sized prawns cut into halves.

Hours in the making, we were pretty impressed by the richness of the broth. Flavour-wise, the soup seemed to lean towards a more porky flavour. It had a thick, almost creamy-like body, a heady prawn aroma and a rich savouriness that simply begged to be slurped up.

The prawns—albeit small considering we paid S$6—were blanched just enough that it remained tender. We recommend giving it a dip into the chili padi-infused soy sauce as the subtle heat and saltiness helps to bring out the sweetness of the crustacean.

Overall, we had close to no complaints other than the fact that the prices are a tad steep. Besides that, Fresh Taste Big Prawn Noodle’s food is tasty and fully deserving of its accolade.
