Since its opening in late 2022, we have had the pleasure of revisiting Las Palmas Rooftop Bar on several occasions. Perched atop Courtyard by Marriott Singapore, the cocktail bar sits on the 33rd floor and offers a striking alternative perspective of the Lion City.

Over the past years, Las Palmas Rooftop Bar has played host to numerous guest shifts with notable bars, and now reveals its latest chapter with a newly launched menu conceptualised by Head Bartender Ron Aransa, who has been shaping its bar programme since day one.
Las Palmas Rooftop Bar’s Cocktail Volume 2.0 is a stylish exploration of 1960s American pop culture, drawing inspiration from art, film, music and travel. The menu is divided into four thematic chapters—Modernist, Vinyl, Hollywood, and Getaway— inviting guests to uncover different moods and narratives of Palm Springs.
Tokyo Cowboy (SGD 21++)

We kicked off the evening with the eye-catching Tokyo Cowboy (SGD 21++) from the Modernist section. Find the artwork atop the cocktail familiar? It’s inspired by Hiroshi Nagai—widely regarded as the father of the city pop movement—whose dreamy visuals brought a distinctly Japanese sensibility to Southern California back in the 1960s.
Striking aesthetics aside, the execution impressed just as much. Built on a base of Ford’s Gin and Iichiko Saiten shochu, the cocktail unfolds with nuanced notes of almond, citrus and cucumber. AER Cocktail Enhancer is used in place of egg white to create the silky layer, while the retro city-pop artwork is printed on edible rice paper. Smooth and refreshing!
Bamba Paloma (SGDG 23++)

The Vinyl section of Las Palmas’ Cocktail Volume 2.0 Menu pays homage to the Latin hits that defined California in the 1960s. The Bamba Paloma (SGD 23++) draws inspiration from Ritchie Valens’ iconic track La Bamba, and is a must-try for those who appreciate a spirit-forward cocktail.
Mezcal is fat-washed with olive oil to lend a subtle grassy note that enhances the spirit’s natural smokiness. It’s then shaken with Maraschino liqueur and rock melon, and served with a grapefruit wedge. The glass is rimmed with a blend of spice and salt, allowing drinkers to lick the edge for an extra layer of flavour with every sip.
Cheesecake (SGD 23++)
After enjoying the bar’s comforting sandwiches and mains (yes, Las Palmas Rooftop Bar serves food too), we explored the Hollywood chapter of the cocktail menu. Here, the clarified Cheesecake 2.0 (SGD 23++) is an indulgent treat for anyone with a sweet tooth. P.S. If you prefer spirit-forward drinks, definitely stick to Bamba Paloma instead!

This Haku vodka-based cocktail truly feels like a dessert in a glass. Clarified citrus brightens the sip, while limoncello, mascarpone and vanilla layer in creamy notes. Milk-washed for a lighter texture, Cheesecake 2.0 is a playful, refined twist on its original incarnation. Served with biscuits for the complete experience.
Tropical Vic (SGD 25++)
We rounded off our journey with the final chapter of the menu, the Getaway section. This playful lineup channels Californian leisure and Tiki escapism, with our last cocktail, the Tropical Vic (SGD 25++), paying homage to Trader Vic, a pioneer of the California Tiki movement.

AER Cocktail Enhancer is once again used to create its flawless, layered presentation. The drink combines Planetary Cut & Dry Rum, Clement Canne Bleue, pink guava, kaffir lime and banana, resulting in a tropical, fragrant and vibrantly expressive cocktail – the perfect finale to the evening.
For those who prefer to navigate by flavour, cocktails can also be chosen by taste profile, from light and refreshing to bold and brooding. There’s even a mocktail category, with non-alcoholic spirit Seedlip providing a sophisticated base that delivers complex flavour without the alcohol.
