We say this a lot about a lot of local foods, but it’s truly comforting food at its best. It’s flavourful, heady with a deep shrimpy aroma and lip-smacking with the addition of crispy pork lard, sambal chilli and a squeeze of fresh calamansi.

The fame surrounding this humble stall is well-founded but that said, you’ll have to brace waiting for a good 30 to 45 minutes for a plate depending on what time you visit. Well worth the wait nonetheless—a plate features an ample portion of rice, seafood and egg noodles soaked in a rich, umami-laden gravy with bits of cooked egg.

For lack of memory space, many often refer to Chia Keng’s fried hokkien mee as the “green plate” hokkien mee. Their homemade chilli punches pretty high on the heat scale so unless you’re a spice lover, go easy with it.

Local foodies will tell you that this joint in Eunos is iconic and that Kim’s is something of a legend as far as fried hokkien mee goes. But that being said, being legendary doesn’t count for much if an establishment fails to upkeep its standards, which tends to be the case here as reported many known foodies. Staying objective—food is subjective after all—their version of this iconic local dish is the moist sort, cooked in a broth heavily concentrated with prawn flavour and pork lard. It’s best enjoyed eaten with their homemade sambal coupled with a squeeze of fresh calamansi.

A bar that serves fried hokkien mee? Now, that’s certainly is unheard of. But who can really complain when its past midnight and you’re half past sloshed? At S$17 a serving, it’s unsurprising given the nature of the establishment. But the folks there swear by it, claiming that KPO’s version is stir-fried the “traditional” way with copious amounts of crispy pork lard, pork belly strips, squid and prawns. From photos, we won’t deny that it looks elevated in a good way, but whether it fairs well, we’ll leave that to the experts.

Located at a nondescript coffee shop along Changi Road lies a stall that’s apparently run by the brother of the owner of the more famous Kim’s Fried Hokkien Prawn Mee.

If you prefer the drier version of Hokkien mee, you’ll dig theirs for sure. It’s packed with umami and savoury goodness and the crispy bits of ikan bills really imbue the dish with something special both textural and flavour-wise.

Yi Ji Fried Hokkien Prawn Noodles—which shares the same corner coffee shop as the coveted Punggol Nasi Lemak—is where you can satisfy your late-night cravings for this mouth-watering, wok hei-heavy noodle dish. Although their rendition did not feature crunchy fried pork lard in it—which is what’s typically used to give this dish its oomph factor—the dish did not fall short in terms of its aroma and flavour. Costing S$5 per plate, we like that the dish came with a generous portion of ingredients tossed together with the noodles. The best part? It opens until 3AM!
