
Moutarde is the latest dining concept by celebrated chef Paul Pairet, the visionary behind three-MICHELIN-starred Ultraviolet in Shanghai, alongside acclaimed establishments such as Mr & Mrs Bund.
Located within the basement of WEAVE at Resorts World Sentosa, the casual French bistro welcomes guests from day to night with a menu centred around timeless French classics, complemented by a thoughtfully curated wine programme by France’s Best Sommelier, Xavier Thuizat.

While we missed its opening celebration last year, we recently had the opportunity to attend an exclusive wine tasting dinner where Paul Pairet and Xavier Thuizat reunited for a one-night-only collaboration.

The evening showcased a selection of Pairet’s signature dishes drawn from his acclaimed international concepts, each paired with an exceptional lineup of wines curated by Thuizat. Altogether, it made for a truly memorable gastronomic experience.
A Culinary Journey Across Paul Pairet’s Iconic Concepts
For the evening, Chef Paul Pairet brought diners on a culinary journey spanning cities, concepts and decades of his culinary career, elevated by the thoughtful wine pairings of Xavier Thuizat.

One standout was Ultraviolet’s “Very-Sea, Sea Scallop” – a visually striking creation that delivered intense oceanic and briny flavours. The dish featured an edible seashell crafted from lime and seawater, encasing a bed of sea urchin, seaweed and lime.
It was paired with the Aramasa Junmai Daiginjo “Colour Earth” from Akita, Japan, resulting in a remarkable amplification of umami flavours.

Another highlight was “A Lobster in a Jar”, a groundbreaking dish originally from Chef Paul Pairet’s Mosaic Paris collection in 1998. As the name suggests, succulent lobster is smoked in a sealed jar with vineyard smoke before being served alongside rich Américaine soup bread. The dish was elegantly paired with a Domaine de Montille Meursault Premier Cru “Genévrières” 2017 Chardonnay from Burgundy, France.

Moutarde’s wine programme has been carefully curated by Xavier Thuizat, one of France’s most celebrated sommeliers. His accolades include being crowned France’s Best Sommelier in 2022, receiving the prestigious Meilleur Ouvrier de France title in 2023, and winning the MICHELIN Guide Sommelier Award in 2024.
With more than 70 French wine labels available, guests can expect a thoughtfully assembled selection spanning both classic and lesser-known regions, offering something suited to every palate and occasion.

While Chef Paul Pairet’s signature creations from his other acclaimed international concepts are not part of Moutarde’s permanent à la carte menu, diners can still look forward to a thoughtfully curated French dining experience that reflects his culinary philosophy and finesse.

One of the best ways to experience the collaboration between Paul Pairet and Xavier Thuizat is through Moutarde’s daily à la carte lunch and dinner menus, best enjoyed alongside selections from its extensive wine programme, or through “The Good Brunch” available on weekends.

Designed for leisurely indulgence, The Good Brunch features an all-you-can-eat spread paired with free-flow beverage packages from $88++ per diner, with optional unlimited alcohol upgrades available at $50++ and $90++ per guest.
