Signature Reserve: Whisky Bar at The Fullerton Hotel Singapore

Signature Reserve is The Fullerton Hotel Singapore’s newest gastro bar. Opened in April 2021, the whisky paradise might be considerably new, but is far from being a newbie in the bar scene. In fact, it is Quaich Bar’s fourth lounge concept and the 4,000-square-feet bar is nothing short of stellar. Located on the ground floor of the iconic five-star hotel, it has taken over the space that Post Bar once occupied.

Conceptualised with an aim to make whisky appreciation more accessible and experiential, Signature Reserve boasts more than 1,000 types of whiskies, of which 500 are available by the glass. There is more than enough variety to satisfy the palates of both the novice and the connoisseur. Their professionally trained Whisky Butlers—the first of its kind—will be there to guide you through the world of whisky!

While the elegant bar’s primary focus is on whisky, it’s safe to say that everyone is welcome here. There are five distinct areas within the bar dedicated for different occasions; a vast selection of alcoholic drinks spanning from cocktails to wines; and even a whisky omakase to boot!


Whisky Omakase at Signature Reserve


Signature Reserve’s whisky omakase places equal emphasis on food and drinks; where guests can expect a scrumptious five-course meal paired with a signature whisky-based cocktail and four different whiskies (20ml each). These omakases are guided by Signature Reserve’s whisky butlers and start from $138/pax.

Whisky omakases are not common, but we are glad it’s finally here in Singapore. Our whisky omakase commenced with a White Chrysanthemum Whisky Sour. The beautiful tipple is inspired by the flavours of Singapore. Concocted with Glencadam Single Malt, White Chrysantemum and local beer reduction, every sip was delightful.

Our palates were in a treat as a stunning starter was served. Lo and behold, the Lumpfish Caviar — served with herbed tomato compote cold tofu in bonito syrup. The exquisite refreshing starter was paired with the Glancadam 13-Year-Old Whisky Journey Exclusive 2007.

When it comes to whisky and food pairing, the general rule of thumb is to find flavours from both that complement. Not dominate each other!


Chicken & Lamb Skewers


Whisky Omakase Pairing Signature Reserve

The Lime Glazed Teriyaki Chicken and Xinjiang Fennel Lamb Skewer were paired with the Deanston 18 Year Old Whisky and the Ledaig 18 Year Old Whisky respectively. The former pairing sees an interesting elevation of the yakitori-styled chicken, where the sweetness and tenderness of the poultry were further amplified. On the other hand, the latter pairing successfully highlights the oak notes of the whisky.


Single Malt Tiramisu

The omakase menu ended off with an unforgettable Single Malt Tiramisu. The mind-blowingly delicious spiked dessert uses Bunnabhain Toiteach a Dha for hints of dark cherry and smokiness. It’s a divine creation that we would absolutely love to have again, any day.

The entire whisky omakase menu needs to be booked three days in advance, so that Signature Reserve would be able to accommodate for any dietary restrictions their guests may have.
