The durian season is here and there’s no better time than now to indulge in the king of fruits! We recently visited Ding Dong in Telok Ayer to try their signature Durian Alaska and here’s our lowdown on the beautiful tropical dessert.
Ding Dong is one of Singapore’s leading restaurants that serves creative Modern-Asian dishes. Helmed by Chef Miller Mai, the team constantly challenges themselves to stay ahead of the game with progressive culinary techniques that showcase Asia’s quintessential flavours – their innovative dishes bring delight to even the most discerning taste buds.
The interior was very cozy and vibrant, with vintage posters that are plastered all over the walls. We loved the ambience and looking at how everyone was engaged in their conversation, it was as if the place provided an escapism from reality.
We know what you’re thinking, is the dessert really worth the hefty price tag? Taking a twist on the classic Baked Alaska, the Durian Alaska (S$21++) resembles a durian with its delicately piped pandan meringue. The dessert comprises a thin layer of biscuit (sablé, a french shortbread cookie), pandan chiffon sponge cake, durian ice cream and house-made durian kaya.
Don’t be too caught up in taking photos of this exotic-looking treat. As mentioned by the staff, the dessert is best consumed upon serving – you wouldn’t want the ice cream to be already melted before you eat it!
Each mouthful of this sweet delicacy was an explosion of sweet, salty and buttery flavours. The lovely textures were evidently well thought out — the creaminess from the ice cream and durian kaya complemented the crunchiness of the biscuit.
The fragrant taste of pandan relieved the sweetness of the meringue and we could taste a pleasant roast from the torched marshmallow. The durian-infused compartments of the dish were subtle; as durian has a tendency to be pungent, we think that this dessert may actually even win over some durian non-lovers.
The verdict? The Durian Alaska is definitely an ideal choice of dessert if you’re looking to satisfy your sweet-tooth craving while staying off the mainstream.
You can add Ding Dong to your list of inventive sweet treats; rest assure that this is not some over-the-top sham as boy, we were convinced that this creation was not a one-trick pony that uses its aesthetic value to compensate for the lack of substance.
