#WGS2021: Peranakan-Mediterranean Champagne Brunch at Riviera

Take a journey to the Mediterranean, while enjoying local fare, with breathtaking waterfront views. An exciting collaboration between PasirPanjangBoy and Riviera, hosted by the World Gourmet Summit.

Anyone else getting a serious case of cabin fever since travelling isn’t an option? Lucky for us, the World Gourmet Summit is launching a unique four-hands Mediterranean-Peranakan Champagne Brunch by Tinoq Russell Goh and Dylan Chan of culinary maestro PasirPanjangBoy; and Riviera’s Executive Chef Rémy Carmignani and Executive Pastry Chef Nicolas Vergnole. Well… They had us at the word Champagne.

Held at Riviera, one of Singapore’s best-known modern Mediterranean dining places with a view, this collaborative effort introduces Mediterranean elegance, with a vibrant splash of bold Peranakan flavours. For just $98++ you’ll be taken on a journey of local heritage and Mediterranean fare that will delight your palate, sense of whimsy, and wanderlust. PasirPanjangBoy’s private dining concept is also known to be fully booked, and advance bookings have a two-year waiting time! Needless to say, this is a once-in-a-lifetime dining experience you don’t want to miss.

First things first, we started the brunch with our favourite way – a good bubbly. Selected to pair with the meal was the Champagne Delamotte Brut NV, a combination of freshness and toughness which delivers a clean, fruity finish that is well-balanced and has an elegant length on the palate. This refreshing and mouthwatering cuvée paired superbly well with the fresh seafood and bold Peranakan flavours. Don’t mind if we can’t stop ourselves!


Pasirpanjangboy usually requires an advance booking of two years


Starting off the four-course brunch is a beautiful grazing platter of small bites – Kueh Pie Tee, Baba Ghanoush, Ngoh Hiang, and Tangia Marrakchia. A balance of nostalgic flavours, with a mediterranean influence. The Tangia Marrakchia in particular deserves a mention on its own. No gamey taste or smell present, in fact it was savoury and the lamb shoulder was so tender it came apart easily. The Cromesquis was lightly battered and fried, not oily at all and definitely worth a try, even for those who are not big fans of lamb.


Sotong Hitam Risotto


The Sotong Hitam Risotto was hands down our favourite. You don’t often see squid ink as an ingredient in Asian cuisine, let alone Peranakan, but this mashup of flavours was an umami bomb of sweetness and savouriness. The iberico pork chorizo added a hint of spice that cut through the creaminess of the risotto nicely, and the char on the squid had a touch of smokiness to it. No more words, just *Chef’s Kiss*.

The Assam Pedas en Papilotte was a huge crowd-pleaser as well. Fresh, tender, and juicy, the Greek Dorade was steamed in a bed of spicy Tamarind Paste with Ginger Flower and Laksa Leaf. The result? A sweet, spicy, and tangy marriage of spices enveloping the fish.

Served together with the Assam Pedas en Papilotte, was the Beef Rendang with Moroccan Batbout Bread. If the meat isn’t ridiculously tender, it can’t be called a Rendang, and this one goes above and beyond expectations. Slow-braised in an exotic blend of 21 herbs and spices, the tender, collagen-filled beef shin literally melts in your mouth. The Moroccan Batbout Bread was served warm, with a crisp exterior and soft, doughy filling. Put them together, you get a great balance of flavours and textures.

Not forgetting dessert of course! A Gula Melaka and Pandan Cheesecake created by none other than executive pastry chef, Nicolas Vergnole, recipient of the World Gourmet Awards Pastry Chef of the Year 2021. We had high expectations, and boy were they met! Light coconut mousse, crunchy vanilla sablé dough, with fresh pineapples infused with chamomile; this was a light and not overwhelmingly sweet dish. The notes of chamomile were distinct as well, which added a pleasant floral aroma to the creamy cheesecake.
