Hokkien Prawn Mee (Fried Prawn Noodles) is a popular Singaporean hawker favourite that is loved by many. Although not as commonly found late at night, there are some places where you can find it. One such stall is Yi Ji Fried Hokkien Prawn Mee located at Upper Serangoon Road. Opened until 3 AM, here is where you can satisfy your late-night cravings for this mouth-watering, wok hei-heavy noodle dish.
This stir-fried dish usually comprises yellow egg noodles, rice vermicelli, prawns, squid, pork belly strips, egg and fried pork lard that is steeped in a robust prawn and pork bone stock.
Although Yi Ji’s rendition of the hokkien prawn mee did not feature crunchy fried pork lard in it – the dish did not fall-short in terms of its aroma and flavour profile. Costing S$5 per plate, we like that the dish came with a generous portion of ingredients tossed together with the noodles.
Cooked low and slow, the broth was allowed to reduce down even more, intensifying its flavour even further and getting the seasoning to a point where it was perfectly savoury but not overly salty. The noodles, like a sponge, absorbs the fragrant stock really well and coupled with the deep, heady wok-hei aroma, elevated the dish tenfold.
The addition of fresh seafood provided a subtle sweetness and texture to the dish and the egg mixed in towards the end gave the sauce a nice savoury richness. The prawns were firm and fresh, but the squid was unfortunately rubbery and a tad overcooked.
To complete the experience, definitely make it a point to mix in the ultra spicy sambal belacan dolloped on the side into your noodles and squeeze the given wedge of calamansi.
