Ranked no. 2 in Asia’s Best Bars 2022 and no. 12 in World’s 50 Best Bars 2022, homegrown cocktail bar Jigger & Pony celebrated its 10th-anniversary last year and launched its new menu, IDENTITY. This revamp sees the 5th edition of the menuzine and a new companion coffee table book that dives deeper into the bar’s cocktail philosophy.

IDENTITY looks into the evolution of Jigger & Pony, how its identity came about and poses the question of what the future holds for the bar and the community. Each chapter in the menu focuses on a different time and theme, allowing you to see the tremendous growth of the bar over the years. Expect over 20 cocktails ($28++ each), including redefined tipples and innovative creations, to punchbowls for sharing.

“Where are you from? What do you do? What are you passionate about? These are questions commonly asked about one’s identity. But, identity is more than who we are, it’s also the questions we are asking about the future – our aspirations, visions, fears, and concerns. It’s also who we want to be in the future.”

“Each cocktail in this menu highlights our strengths, diversities of ideas we stand for, and the stories of our bar, bartenders and community – all of which contribute to our identity.”

– Uno Jang, Bar Manager of Jigger & Pony.

IDENTITY: Cocktail Highlights at Jigger & Pony

1. Super Lemon Highball

Light, refreshing and citrusy, this was the perfect drink to start the night with – after all, who doesn’t love a good highball?

Created with freshly squeezed lemon juice that was frozen to extract the lemon water and combined with Hokkaido super soft water and Suntory World Whisky AO and blended with the maewari technique for 72 hours. Served with lemon jelly.

2. Dirty Martini

Part of the “Ten Year is Only the Beginning” chapter in the menu, this Dirty Martini was a challenge Jigger & Pony posed to themselves – to elevate it yet remain faithful to the classic.

The team reinvented the Dirty Martini by engineering a housemade brine and olive oil emulsion. Then, using Bombay Sapphire Gin as a base, it’s garnished with a housemade olive stuffed with miso, cream cheese and black olive crumb that provides a briny and creamy contrast to the tipple. We loved the aromatic olive oil fragrance, and while you see a thin layer of olive oil on the drink’s surface, it’s not overwhelming on the palate. Well-balanced overall with the brine of the olives.

3. Ugly Tomatoes

Looks can be deceiving! This slightly sweet, savoury, floral and herbal tipple is Jigger & Pony’s answer to sustainability in an achievable, measurable solution. How? By reusing unwanted ingredients by producers!

They combine B-graded heirloom beefsteak tomatoes from Genting Highlands in Malaysia that can’t be sold because of their colour or shape with Hapusa Himalayan Gin and housemade kummel to create a sweet and savoury tipple. Served in handmade wavy Kimura Crumple glassware. It’s oddly shaped, but doesn’t it make you appreciate the beauty in the imperfection of things? Such a clever take on inclusivity and conservation. Shape and size don’t matter!

4. Cloudy Kangaroo

This tipple is the new-and-improved dry vodka martini made with typically discarded byproducts. Inspired by the natural wine movement, this cocktail is intentionally unfiltered; hence the cloudy appearance, which comes from sake kasu from sake production and soymilk curd from Soy Milk Punch. Think of it as similar to a Nigori sake, but a cocktail 🍶

It’s aromatic with a silky, almost cream-like texture. Made with Haku Vodka, sherry, and peach, which elevates the tipple with fruity flavours.

From tackling topics such as sustainability and supporting local producers; to the clever use of ingredients such as sake kasu, innovative methods and more… It’s exciting to see the big leaps Jigger & Pony has taken with this new menu. We can’t wait to see what’s in store the next decade, but we’re sure they’ll blow us away once again with another meticulously created, innovative cocktail menu.
